Triple Chocolate Cookie
This cookie is fudgy, chewy and crisp. It just may be the most perfect cookie ever baked. It is absolutely a favorite in our house for sure. Get the kiddos in the kitchen to help you make these ones. And sneak some chocolate chips while they bake.

- 1 cup unsalted butter room temperature
- 2 cup brown sugar packed
- 2 egg room temperature
- 4 teaspoon vanilla extract
- 2/3 cup cocoa powder
- 2 teaspoon espresso powder
- 2 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup white chocolate chips
Preheat the oven to 350°F and line a baking sheet with parchment paper. Set aside.
Place the softened butter and brown sugar in a stand mixer fit with the paddle attachment. Beat on
medium high speed until fluffy, about 8-10 minutes.
Scrape down the sides of the bowl and add the eggs on at a time and vanilla extract. Mix until combined.
Scrape down the bowl and in a separate bowl, add the cocoa powder, espresso powder, flour, baking soda and salt. Mix together and slowly add into the mixer on low speed, gradually increasing too medium. Mix until just combined, o not over mix.
Add in chocolate chips and fold with a rubber spatula until evenly distributed.
Scoop the cookies with a 2oz scoop onto the parchment lined baking sheet and bake at 350°F for 11-12 minutes or until the edges are set but the centers are still gooey. Allow to cool on the pan for 10 minutes on the baking sheet until set. Then transfer them to a cooling rack to finish cooling. ENJOY!
