Sweet potato mac and cheese
This recipe is simple enough for the kids to make with or even for you. Yet, it is great way to get some extra veggies in them while giving them something they love! You can also make it even heartier with some chili on top! ENJOY!
- 12 ounces whole wheat elbow macaroni
- 1 medium sweet potato about 8 oz.
- 1 1/4 cups whole milk
- 2 tablespoons unsalted butter
- 2 cups Shredded Cheddar Cheese
- 1 teaspoon mustard powder
- 1 teaspoon hot sauce optional
- 1 teaspoon kosher salt
Cook macaroni according to package directions; drain.
Meanwhile, poke sweet potato with fork; microwave on high 4 to 5 minutes, until fork tender. Peel sweet potato.
In large pot over medium-low heat, combine milk, butter and sweet potatoes. Mash until smooth.
Mix in cheese, mustard powder, hot sauce and salt. Stir into the pasta until creamy and smooth.
