Oven roasted cauliflower with preserved lemons

I love cauliflower like this. I love it roasted any way and then the addition of the preserved lemon is just awesome!

Ingredients
  

  • 1 head cauliflower cut into florets
  • 2-3 tablespoons olive oil
  • Kosher salt to taste
  • Freshly cracked black pepper to taste
  • 3 cloves garlic minced
  • 1 preserved lemon sliced thin and quartered
  • 1 tablespoon Parmesan cheese
  • 1 tablespoon parsley chopped

Method
 

  1. Preheat the oven to 400 degrees. Toss the cauliflower in a bowl with the first 5 ingredients. Lay on a sheet pan and roast for about 10-12 minutes. Toss one time about half way through. It should be fragrant and browned.
  2. Sprinkle with Parmesan and parsley before serving. ENJOY!!
