Preheat the oven to 450 degrees.
In a large bowl, toss the sliced peaches with the juice of 1 lemon and the vanilla.
In a separate bowl, combine the flour, sugar, salt, cinnamon and nutmeg. Then lightly toss the dry ingredients with the peaches.
In a 9" pie plate, line the bottom of the pie plate with the bottom crust, allowing the edge to slightly hang out. Brush the bottom crust with the egg wash. Top the bottom crust with all of the peaches. Then top with the top pie crust. You can do any shape that you like. Just make sure to vent the crust if you roll it all the way onto the top. Brush with the egg wash on the top crust.
Bake at 450 for 10 minutes. Then lower the oven to 350 degrees and bake for an additional 20-25 minutes. Enjoy!
