Fluffy Pancakes
These are the fluffiest pancakes I have ever made. They are awesome in any shape and with any mix-ins or toppings. These will be a family, crowd pleaser for sure!

- 1 1/2 cups all-purpose flour
- 3 1/2 tsp baking powder
- 1 tsp kosher salt
- 1 tbsp granulated sugar
- 1 1/4 cups milk
- 3 tbsp unsalted butter melted
- 1 Large egg scrambled
- 1 tsp vanilla extract
In a large bowl, mix together all of the dry ingredients. In a large measuring cup whisk together all of the wet ingredients. Immediately whisk the wet ingredients into the dry as the butter will begin to cool and separate.
Do not over mix your batter, there should still be lumps in the batter.
Heat your pan until just lightly smoking. Add in butter and ladle, approximately 2oz of the pancake mix into the prepared pan. Cook until they are bubbly on the edges and then flip. Cook for another 3-4 minutes until lightly browned.
Keep the pancakes warm in the oven if you wish while you cook the remaining pancakes. ENJOY!
