Classic Granola

This is my favorite "grown up" granola recipe. You can swap out the fruit and/or the nuts in here if you wish. Customize it and make it your own. This is a recipe you will go back to time and time again. It is a perfect cereal, parfait topper, fruit topper for dessert or on its own for a snack.

Ingredients
  

  • 3 cups oats
  • 3 tablespoons light brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon kosher salt
  • 1/3 cup raw honey
  • 1/4 cup vegetable or coconut oil
  • 1 teaspoon pure vanilla extract
  • 1/2 cup dried cherries or dried cranberries
  • 1/2 cup sliced toasted almonds
  • 1 cup shredded unsweetened coconut-optional

Instructions
 

  • Preheat the oven to 300 degrees
  • In a medium bowl mixture your oats, sugar, cinnamon and salt. Toss just to combine.
  • In a small bowl, mix together the honey, oil, and vanilla
  • Pour over the oats mixture and mix until all of the oats are lightly coated
  • Pour the mixture onto a lightly sprayed 12x9 sheet pan and make sure it is in an even layer
  • Bake for 30-35 minutes and stir half way through the baking process. You make also want to turn your pan so that it bakes evenly. You want some to clump together, but not large clumps.
  • Meanwhile, on a separate sheet pan, toast the coconut, if using for about 8-10 minutes or until lightly browned.
  • Once the granola is done, pull it from the oven and let it cool for about 15-20 minutes. Stir it periodically during the cooling process. Then toss in the dried fruit and nuts and stir into the granola. Add the toasted coconut as well if you are using it. Allow the granola to cool completely before storing in an air tight container. You can keep at room temperature for about 2 weeks and freeze if you wish for up to 3 months.
