Apple Topping
This is amazing on pancakes, waffles, french toast or even ice cream! This is a quick and easy way to use up those Fall apples. You can make it in just a few minutes and dump it all in one pan. The whole family will love this on whatever you choose. It would even be great slightly cooled down and put on yogurt with some granola! ENJOY!

- 2 large Apples medium diced, any variety you have on hand
- 2 tbsp butter
- pinch of kosher salt
- 2 tablespoons brown sugar
- 1/4 tsp cinnamon
- 1/2 tsp Mexican vanilla extract regular will work if you do not have Mexican
Heat a skillet to medium. Add in the butter and let it melt, but not brown.
Add in the diced apples. Cook for 1-2 minutes. Add the salt and stir.
Mix in the cinnamon, brown sugar and vanilla.
Let it simmer, stirring occasionally on medium-low heat for about 15-20 minutes or until the apples are soft.
Serve warm over pancakes, waffles, french toast or ice cream. Or slightly cool and add to a parfait!
