The Fluffiest pancakes ever!

Last Sunday for Breakfast with the Monti’s I made homemade pancakes for breakfast. I made them in the shape of Emoji pancakes, because, why not and how cute!! Yet, they would have been amazing as regularly shaped pancakes as well. I switched up my regular recipe just a bit and they were amazingly fluffy!! These were the fluffiest pancakes I have ever made! They are perfect for the kiddos to make and/or help you make!

These pancakes would be amazing with some add ins as well. Let the kiddos get creative. They would be awesome with blueberries, chocolate chips, bananas or strawberries. They would be great with peanut butter or nutella or just with butter and syrup.

Also, one great thing about this recipe is that you can double or triple it and put the extra dry ingredients into baggies and then when you are ready to use it you can just add in the wet ingredients and whisk it up. Super quick and then you always have pancake batter on hand and you don’t need to buy the store bought one.

My oldest daughter, who is 2 years old helped me make these and she had so much fun adding in the ingredients and whisking them up. She loved the Emoji shapes and she ate a ton of pancakes that morning! Score for Mama! I also served them with fresh strawberries, which she ate right up! Two for Mama!! Older kids can do this recipe by themselves for sure,(just may need a little help with the stove, depending on age), but can for sure at least mix up the batter!

Chef’s Tip-Make sure that your baking powder is not expired and make sure that you do not over mix your batter. When you are making pancakes, especially from scratch, you will have lumps in the batter and that is totally okay. They will cook right out!

Fluffy Pancakes

These are the fluffiest pancakes I have ever made. They are awesome in any shape and with any mix-ins or toppings. These will be a family, crowd pleaser for sure!

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp kosher salt
  • 1 tbsp granulated sugar
  • 1 1/4 cups milk
  • 3 tbsp unsalted butter melted
  • 1 Large egg scrambled
  • 1 tsp vanilla extract

Instructions
 

  • In a large bowl, mix together all of the dry ingredients. In a large measuring cup whisk together all of the wet ingredients. Immediately whisk the wet ingredients into the dry as the butter will begin to cool and separate.
  • Do not over mix your batter, there should still be lumps in the batter.
  • Heat your pan until just lightly smoking. Add in butter and ladle, approximately 2oz of the pancake mix into the prepared pan. Cook until they are bubbly on the edges and then flip. Cook for another 3-4 minutes until lightly browned.
  • Keep the pancakes warm in the oven if you wish while you cook the remaining pancakes. ENJOY!
