Like most moms, I am always looking for ways to get more veggies into the kiddos. This is an awesome recipe to get some sweet potatoes into them. It uses their absolute favorite food vehicle, Mac and cheese. Which they could live on breakfast, lunch and dinner if I let them.
This recipe comes together super quickly and easily and my girls gobbled it up. It was also yummy enough that I would also eat it any day of the week!
The kids can make this one with you or for the little bit older ones, they can make this for you. We do the sweet potato in the microwave, so just be careful that it is hot. Then the rest on the stove top. So, that is super quick and easy.
I also used this as a base from Chili Mac and the kids went crazy for it. That got them even more veggies and protein from the meat and beans. So, this can be a very great meal ideal for even the pickiest of eaters.

Chef’s Tip-Â Make sure the potato is soft enough to mash without being stringy. Watch the heat when you are mixing in the cheese or the mixture can curdle. You can use any noodles in here, but I love using the whole wheat elbow noodles.
Sweet potato mac and cheese
Ingredients
- 12 ounces whole wheat elbow macaroni
- 1 medium sweet potato about 8 oz.
- 1 1/4 cups whole milk
- 2 tablespoons unsalted butter
- 2 cups Shredded Cheddar Cheese
- 1 teaspoon mustard powder
- 1 teaspoon hot sauce optional
- 1 teaspoon kosher salt
Instructions
- Cook macaroni according to package directions; drain.
- Meanwhile, poke sweet potato with fork; microwave on high 4 to 5 minutes, until fork tender. Peel sweet potato.
- In large pot over medium-low heat, combine milk, butter and sweet potatoes. Mash until smooth.
- Mix in cheese, mustard powder, hot sauce and salt. Stir into the pasta until creamy and smooth.
