I love this recipe. It is simple and complex at the same time. It is perfect for weeknight or fancy dinner party. Preserved lemons are the secret pow in this cauliflower and you will love it.
Chef’s Tip-Â You can buy preserved lemons, but they are super expensive and you can only get them at specialty stores or spice shops. So, I recommend just making them. It is some time and a little work, but totally worth it. Check out the recipe I have for preserved lemons.
Oven roasted cauliflower with preserved lemons
I love cauliflower like this. I love it roasted any way and then the addition of the preserved lemon is just awesome!
Ingredients
- 1 head cauliflower cut into florets
- 2-3 tablespoons olive oil
- Kosher salt to taste
- Freshly cracked black pepper to taste
- 3 cloves garlic minced
- 1 preserved lemon sliced thin and quartered
- 1 tablespoon Parmesan cheese
- 1 tablespoon parsley chopped
Instructions
- Preheat the oven to 400 degrees. Toss the cauliflower in a bowl with the first 5 ingredients. Lay on a sheet pan and roast for about 10-12 minutes. Toss one time about half way through. It should be fragrant and browned.
- Sprinkle with Parmesan and parsley before serving. ENJOY!!
