Today it definitely started feeling like Fall weather outside. Fall for sure means Pumpkins, warn spices, and APPLES!! Yep, apples are the best in the Fall. Especially if you go apple picking and get them fresh from the tree. I know that we are all looking for fun and easy ways to use up all of those yummy Fall apples and this recipe is super simple and easy.
We put it on top of pancakes, Emoji pancakes to be specific! That is all that I am allowed to make in my house these days! Yet, they are perfect on any pancake, french toast, waffle or even on ice cream. This would be incredible on some ice cream or frozen yogurt. Vanilla for the kiddos and maybe some salted caramel, bourbon ice cream for the adults. MMMMMM!
You can use any variety of apple that you have at home, so don’t rush out and buy granny smith’s or honey crisps. Use whatever you already have and it will be even better if you use different ones each time. You can make a slightly different flavor each time you make it.
This quick and easy method makes a light caramel-like sauce. It is not overly sweet and you get the warm fuzzies from the cinnamon. I also used Mexican vanilla instead of regular vanilla and that adds an extra note of spice and warmth. If you don’t have it though, don’t sweat it, regular vanilla is great too!
Chef’s Tip-Make sure that you keep the heat at medium-low or you will burn up your sauce while your apples soften. Stir as the apples cook down. You make need to adjust the sugar level depending on the sweetness of the apples. For example, if you use granny smith, you may want a little extra or if you use Gala or honey crisp that are super ripe and sweet, you may want a little less.
Apple Topping
Ingredients
- 2 large Apples medium diced, any variety you have on hand
- 2 tbsp butter
- pinch of kosher salt
- 2 tablespoons brown sugar
- 1/4 tsp cinnamon
- 1/2 tsp Mexican vanilla extract regular will work if you do not have Mexican
Instructions
- Heat a skillet to medium. Add in the butter and let it melt, but not brown.
- Add in the diced apples. Cook for 1-2 minutes. Add the salt and stir.
- Mix in the cinnamon, brown sugar and vanilla.
- Let it simmer, stirring occasionally on medium-low heat for about 15-20 minutes or until the apples are soft.
- Serve warm over pancakes, waffles, french toast or ice cream. Or slightly cool and add to a parfait!
