My husband and I had our first date at the White Chocolate Grill restaurant. It is the perfect restaurant for me because I am a huge white chocolate fan! So, I had a white chocolate martini and they have really amazing food as well as desserts. So, we had wonderful steaks and sides, but the absolute most memorable thing, besides the company, of course was the dessert. We shared a giant white chocolate and walnut blondie that was served warm with vanilla ice cream and chocolate sauce. That was almost 9 years ago and we still talk about how amazing it was. So, when I was thinking about our anniversary dinner and what I was going to make, it came to mind to make the blondie dessert.
Blondie vs Brownie
This is a tough one for me because I am a chocoholic for sure! I love brownies and the chocolate goodness that is the center while they have that amazing crusty, crunchy, crackle top. I mean what is not to love! Yet, I am a giant white chocolate fan, so it is such a perfect fir for me to make these blondies. These are almost like a giant cookie bar. They have a crusty, crunchy outside and creamy, gooey inside and white chocolate chips. which… well just yes!
Nuts or No Nuts
In my opinion nuts in a blondie are great. On the other hand, I am not a huge fan of nuts in my brownies, but I think that when it comes to adding them to blondies they add a great, buttery crunch. I did not add them this time, as my daughter has some severe nut allergies, so I do not cook with them much at home, yet it is very simple to add them in if you wish. I would do walnuts or even a pistachio would be amazing in here. Get nutty and try your favorite nuts in here.
Chef’s Tip-Slightly under bake blondies, not by much, but just slightly as they will continue to cook once you remove them from the oven and they will stay nice and moist and creamy in the center if you do that.
White Chocolate Blondies
Ingredients
- 2¼ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 1/2 sticks unsalted butter softened
- ½ cup granulated sugar
- ¾ cup light brown sugar packed
- 1 Tablespoon vanilla extract
- 2 large eggs
- 1½ cups white chocolate chips
- 1/4 cup chopped walnuts optional
Instructions
- Preheat oven to 370F degrees. Line a 9x9 inch baking pan with aluminum foil or parchment paper and spray with non-stick cooking spray. Set aside.
- Whisk together the flour, baking soda, and salt in a medium size bowl. Set aside.
- In a large bowl, using an electric stand mixer, cream together the butter, granulated sugar, light brown sugar, and vanilla extract until combined.
- Add eggs one at a time, mixing between each egg and scrape down the sides..
- Add flour mixture and mix until just combined. Do not over mix it or you will get a tough blondie.
- Using a rubber spatula, stir in the white chocolate chips until combined and nuts if using.
- Press dough into prepared baking pan. Bake for 30-35 minutes or until edges are lightly golden brown and the center is just cooked. Let blondies cool completely before cutting into squares. ENJOY!!
