Homemade Peach Pie

One of my favorite things about Summer is in season stone fruit. I absolutely love peaches, nectarines and plums. I love to just eat them whole. I also really love them cooked. Whether it be grilled, baked in a pie, in a crumble or just baked on their own and served with vanilla ice cream. So, you can only imagine how excited I was to learn when I started dating my now husband, that his parents grow peaches in the back yard!! What?? Home grown stone fruit for Summer… YAAAASSSS!!!!! It was like I hit the mother load!

I always enjoy the peaches that they send home for us, but this year was even more special. This year we ended up staying with them for a couple of weeks while we were moving. We had closed on one of our homes a few weeks prior to the closing on the new house. So, we packed up and moved in with Nonna and Nonno for a couple of weeks. Well, I was prepared to take full advantage of the yummy treats and old family recipes!!

I knew that I had to learn from her how to make the most amazing focaccia bread. So, that was first on my list… and I am soooo happy I got to do it with her. I learned what I had been doing wrong with mine!! I will absolutely be posting that recipe soon, I just want to make sure that I perfect it on my own first! There are so many amazing gems they grow in the garden from carrots, cucumbers, tomatoes and zucchini(and the awesome flowers); to green beans and eggplant and almost everything in between. Yet, the sweetest of them all… the peaches!

The one Saturday we had gotten about 50 peaches from the trees. It was insane the amount of peaches we had. I was so excited to eat them, but we had more than any of us could possibly eat. My mother in law had asked me if I knew how to make the pies and I did!! I was so honored and excited to teach her something and cook with her some more. So, we decided to can some with a light syrup and the next day we made the pie! It was absolutely delicious and I am very excited to share this simple, yet delicious recipe with you. If you have access to homegrown peaches or peaches from the Farmers market that would be best. If not though, no worries, just make sure you have really ripe, but not mushy peaches!

Chef’s Tip- This pie can be made with peaches, nectarine, plums… any stone fruit. You want to make sure that use really ripe, but not mushy stone fruit here. Also, make sure that you slightly “over fill” the pie so that you have a nice full pie after it bakes. Lastly, when you sprinkle the sugar on at the end, if you use a slightly larger more course crystal than regular super fine. I will also note that down in the recipe! ENJOY!

Homemade Peach Pie

This is such a simple and delicious Summer pie that can be swapped out with peaches, nectarines or plums. It is sure to please even the pickiest of eaters and make the best after dinner sweet treat!

Ingredients
  

  • 2 round pie crusts-store bought or homemade
  • 1 egg whisked with a splash of water
  • 6 cups fresh ripe peaches; peeled and sliced
  • juice from 1 lemon
  • 1/2 cup all purpose flour
  • 1 cup sugar
  • 1 tsp vanilla
  • 1/4 tsp kosher salt
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg

Instructions
 

  • Preheat the oven to 450 degrees.
  • In a large bowl, toss the sliced peaches with the juice of 1 lemon and the vanilla.
  • In a separate bowl, combine the flour, sugar, salt, cinnamon and nutmeg. Then lightly toss the dry ingredients with the peaches.
  • In a 9" pie plate, line the bottom of the pie plate with the bottom crust, allowing the edge to slightly hang out. Brush the bottom crust with the egg wash. Top the bottom crust with all of the peaches. Then top with the top pie crust. You can do any shape that you like. Just make sure to vent the crust if you roll it all the way onto the top. Brush with the egg wash on the top crust.
  • Bake at 450 for 10 minutes. Then lower the oven to 350 degrees and bake for an additional 20-25 minutes. Enjoy!
