Unicorn Cookies

I am always on the look out for fun new things to use in the kitchen with the girls! A few months back I found Frozen chips and we made cookies with those! Well, I was at our local grocery store and I found Unicorn chips! As a girl mom, I HAD to get them!

My oldest daughter, who is almost 3 years old, was especially excited for these! So is all about unicorns and rainbows and anything colorful and girly! My younger daughter, 20 months, was excited because her sister was excited! HAHAHA!

Cookies, Brownies or Cupcakes

I was trying to decide if we should make cookies, brownies or cupcakes with these vanilla Unicorn chips! My daughter then asked, “Mommy, can we make some treats for our cousins too???” So, I of course said, “Yes”!! Then I decided on cookies! They are easiest to make a lot of and easiest to transport! So, cookies it was! Yet, I think that these chips would have been amazing in some chocolatey, ooey, gooey brownies!

Chef’s Tip- I have recently started baking a lot more with whole wheat flour. My older daughter has terrible digestive issues and I have always tried to watch her sugar intake and make sure she eats enough fruits and veggies! Make sure she drinks enough water and fluids and all of that! So, the last thing we are altering is her white flour. So, I have changed a lot of regular items to whole wheat. We do whole wheat pasta now and definitely in homemade baked goods. Since I can control what goes into it, I will! It is a great small change for anyone, but especially if you have any kind of dietary needs. I will say though, if you are doing wheat flour subbed for all purpose flour, do 3/4 cup of whole wheat flour for every 1 cup of all purpose flour.

Unicorn Cookies

These cookies were so much fun to make with the kids! They loved making the batter, cutting them out and seeing the blue and pink chips in the cookies!

Ingredients
  

  • 1 3/4 cups whole wheat flour or 2 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 1 1/2 sticks butter room temperature
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 10oz package unicorn chips

Instructions
 

  • Preheat the oven to 375 degrees
  • In a bowl, combine the dry ingredients together and lightly mix
  • Using a stand mixer or hand mixer, cream together the butter and the sugar. Add the eggs one at a time and mix to combine in between each addition.
  • Slowly and gradually mix in the flour mixture, watch the speed so you don't get flour everywhere!
  • Don't over mix.
  • Using a rubber spatula or a wooden spoon, mix in the unicorn chips to combine.
  • Wrap the dough in plastic wrap and refrigerate for at least 30 minutes
  • Using flour to lightly flour your surface; Roll out the dough and using your favorite cut outs, cut shapes out of the dough and put them onto a non-stick cookie sheet.
  • Bake for 8-10 minutes. Cool on the baking sheet for a few minutes and then transfer to wire cooling racks. ENJOY!!
