Car Parade Cookie Cakes

Our lives as we knew them are not the same right now. They may not be for a very long time, if ever again. Let’s face it, it is not the best way to celebrate birthdays, graduations, or anniversaries. Yet, it is at least a great way to still be able to show those we love that we are there and we care!

The Cookie Cake

Cookie cakes are an awesome way to make a little treat for whomever it is that you are celebrating. These are perfect because they do not require a lot of decorating. They can easily be passed off from the car window. They can be made and decorated in aluminum pans so that you can easily transport them. There are so many flavors that you can choose from. You can easily personalize them for whatever the occasion and/or person.

Snickerdoodle versus Chocolate Chip

So, my favorite cookie is hands down chocolate chip. However, for these cakes I really do love making snickerdoodle. Not only does it happen to be the favorite of our niece who was the recipient of both of these cookie cakes, but it makes a super simple and substantial cookie cake. Chocolate chip can obviously make a great cookie cake as well and you can even do other flavors, but I like that the snickerdoodle can actually be made more like a cookie bar and it is super easy to make giant!

Buttercream Frosting

For these cookie cakes, it is easiest and best to decorate them with a simple buttercream frosting that you can color for different borders or writing. To make the border, I suggest a star or flower tip. It can easily make a great border without a lot of skill needed. When you are writing the message, I recommend either just cutting the tip small off of the plastic piping bag or you can use a thin writing tip if you feel comfortable with that.

Chef’s Tip- For these cookie cakes, make sure that you use a little more substantial batter than just making a cookie and doubling the dough. You will need to have something that is more like a cookie bar than just a cookie. When putting this into the pan, leave about a 1/4-1/2 inch border around the edge for the cookie to grow as it bakes. Let it cool completely before decorating.

Snicker doodle cookie cake

I love this recipe for these cookie cakes because it is more like a bar than just a cookie. It holds up great and bakes up really nice. It is super simple and can be made quick.

Ingredients
  

  • 1 cup butter softened
  • cups sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ¼ teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tarter
  • 1/4 teaspoon cinnamon
  • 3 cups flour
  • cinnamon/sugar blend for the top I always have this in my cabinet for toast and other things

Instructions
 

  • Preheat oven to 400 degrees F.
  • In a bowl of the mixer with the paddle attachment, cream butter and sugar together.
  • Add eggs, 1 at a time and beat well after each addition. Add the vanilla and mix.
  • In a bowl, add salt, baking soda, cream of tarter, cinnamon and flour and mix until just blended.
  • Spray a 10x15 inch pan or a round pan with cooking spray. Press dough evenly over pan. Leave a 1/4-1/2 inch border around the edge so that the cookie can grow as it bakes.
  • Sprinkle with cinamon/sugar and bake for 18 to 20 minutes
  • Cool and decorate however you wish. ENJOY!.
