    Homemade Apple Cider

So, if you have been following the blog, you know that we went apple picking last weekend. We have been enjoying orchard fresh apples all week. I made apple crisp stuffed apples, a few pans of apple slices, bourbon caramel apple ice cream and the girls and I have been eating apples for snack all week. They are actually the perfect size for the snacks for the little ones without having any leftover. I was looking at the bowl on Friday and realized we still had a couple dozen apples left. I wanted to make sure that we used them all up before they went bad. While trying to think of the best…

    Apple Slices

I grew up eating apple slices at almost every major holiday event thanks to my aunt Pam. She always baked these from scratch and they were always on the dessert table. I remember the flaky crust and gooey, apple filling. The warm spices and the sweet glaze. The best thing about food is that it creates memories that you never forget. You can smell something or eat something and be transported in time. Why I love food and family so much! When I was thinking of what to do with all of the apples we picked at the orchard, my aunt Dawn and I got to talking about apple slices. I thought, “Yes,…

    White Chocolate Pumpkin Snickerdoodle Blondies

Well, that is a mouthful to say… BUT the real treat is a mouthful of these incredible blondies. These blondies scream Fall with the pumpkin, pumpkin pie spice and white chocolate chips! OOOOO MMMMM GGGG!!!! To say these are one of my favorite Fall desserts would be an under statement, these may be one of my favorite… Period! Which is saying a lot for me because I do not usually jump on the Pumpkin spice anything bandwagon. What makes these blondies so delicious is that they have everything you could want in a dessert. They are creamy and crunchy and sweet, nut not too sweet and have those warm Fall spices. Not only…

    Stuffed Shells

I love Fall foods and recipes, I think I have definitely said that more than once! One thing I love most in the Fall are stuffed pastas. Sure, you can eat these year round, but they have such a comforting feel in the Fall when the weather starts getting chillier outside. You can make them with hearty meat sauces and countless filling options. In house we have the great stuffed pasta debate of meat filling versus cheese filling! Which do you prefer? I am cheese all the way, but the hubby prefers meat. Since we are both Italian, but come from two different regions in Italy, this does not surprise me at all.…

    Southwestern Corn Salad

I absolutely love corn, especially in late Summer, early Fall as it is as fresh as can be.  Always looking for amazing side dishes to make when I make tacos. Usually I do my go to guacamole, that by the way, my 3 years made almost 100% by herself last night. That is how many times we have made it. She can tell you everything that goes into it and do the steps to put it all together. I cut the avocados, obviously, but she is getting very good at it. Anyway, I am always looking for other side dishes beside the guac to go with the taco dinner. We like rice and…

Simple and Delicious Sweet Potato Mac and Cheese

Like most moms, I am always looking for ways to get more veggies into the kiddos. This is an awesome recipe to get some sweet potatoes into them. It uses their absolute favorite food vehicle, Mac and cheese. Which they could live on breakfast, lunch and dinner if I let them. This recipe comes together super quickly and easily and my girls gobbled it up. It was also yummy enough that I would also eat it any day of the week! The kids can make this one with you or for the little bit older ones, they can make this for you. We do the sweet potato in the microwave, so just be…

    White Bean Ragout

I absolutely love Fall food and flavors for so many reasons. The biggest reason is though that they are so bold and hearty and stew and braise and simmer for hours. This creates amazing complex flavors in so many ways. It was a rainy chilly day here in Chicago land and so it was the perfect day for some hearty, bold flavors and this white bean ragout was the absolute perfect thing. You can pair this with meats, sausage would be amazing with this. I paired it with some perfect filets of Chilean Sea Bass. The recipe for the Chilean Sea Bass is below and it was a match made in heaven. To…

    Blueberry Peach Crumble

This was the perfect end of Summer dessert. I made this dessert for a Labor Day party that we went to today and it was a huge hit. I have made countless crumbles between work and home. This was definitely a keeper recipe. I did something slightly different than I normally do in the topping. Instead of adding chunks of butter or even just straight melted butter… I used brown butter in this crumble. I also used brown sugar in the topping versus regular sugar. The nutty addition of the brown butter and the slight molasses flavor in the brown sugar both complimented the fruit perfectly. I always say to use recipes as…
