This is one of those recipes that you are going to make again and again. These fudgy, ooey-gooey, minty, Oreo brownies will very quickly become a family favorite.
The other thing I like about these brownies is that you can use this base recipe and make other versions very simply. I absolutely love recipes like this. Where you can make they many different ways by using one base recipe. I will give you a few examples of other options as well as I would love to hear what you all come up with to change it up.
How do you Brownie?
Are you a fudge packed brownie lover or a cake-like brownie lover? I am a fudge packed brownie lover for sure. I love the ooey, gooey texture of a really fudgy brownie. Yet, if you are a more cake-like brownie lover, these brownies can still be for you. You can decrease the butter slightly and bake them a tad longer and BOOM, more cake-like brownies!
How do you get a really fudgy brownie? You need a higher fat to flour ratio. The more the fat, the more fudgy the brownie. I also prefer to use melted butter versus oil. Yet, either will give you the fudginess you want. The fat can also come from the eggs or egg yolks that you add in.
How to simply switch it up
This is one of those recipes that can easily be changed by just changing a couple of items. Below are some examples of simply switches you can do to make these brownies a little different.
You only need to switch out 2 ingredients to make a whole different Oreo brownie. You can switch out the Oreo type and the extract. Swap the mint Oreo and the peppermint extract for the following and change it up with the same simple recipe.
Original Oreos + vanilla extract
Peanut Butter Oreos + vanilla extract + you can also add a swirl of peanut butter through the brownies here
Chocolate Hazelnut Oreos + Almond extract
S’mores Oreos + vanilla extract + some mini marshmallows and sprinkle the top with some crushed up grahams
As you can see the possibilities here are endless. Take your favorite Oreo and make it into an ooey, gooey brownie.
Let the kiddos help
This is a perfect recipe ti get the kids involved. There are a bunch of things they can do here to help. From all different ages and skill levels. They can do things like mix, stir, measure and crack eggs. All the way up to the point where they are a little older and this can be a great first recipe they make with little to no help. If they are just starting out in the kitchen with you, if nothing else, they can crush the Oreos. They will love that part! I know mine do.
Chef’s Tips
My biggest tip for these and any really fudgy brownie, is to melt your butter and mix it with your sugar first. Also, blend two types of sugars. Here we blended light brown sugar and granulated sugar. Melt the butter and the sugars together and this will help get you the texture you are looking for with these. Also, do NOT over bake them. Watch your time. Make sure you are baking just until a toothpick comes out clean and then let them cool completely. They will continue to cook as they cool.

Mint Oreo Brownies
Ingredients
- Ingredients
- 1 1/4 cups salted butter
- 1 1/2 cups light brown sugar
- 1 cup granulated sugar
- 4 large eggs room temperature
- 1 1/2 cups cocoa powder
- 3/4 teaspoon salt
- 2 teaspoons peppermint extract
- 2/3 cup all-purpose flour
- 18 Mint Oreo cookies crumbled into pieces and divided
Instructions
- Preheat oven to 350°F. Grease and line a 9″x9″ pan with parchment paper and set aside.
- In a bowl set over boiling water, combine butter and two sugars. Melt and stir with a whisk until the sugars are completely combined with the butter. This can be done in the microwave as well on 30 second intervals. You are looking for the mixture to be glossy when mixed.
- Allow this mixture to cool slightly, and then add in the eggs one at a time. Make sure you are whisking in between each addition. Whisk until the mixture lightens in color slightly.
- Add in the cocoa powder, salt, and peppermint extract. Fold in flour until just combined.
- Lastly, fold in about 3/4 of the Mint Oreo cookie pieces.
- Pour mixture into prepared baking pan and top with the remaining 1/4 of the crushed Oreos. Then bake for roughly 45-50 minutes, testing the doneness by inserting a knife or toothpick into the center of the brownies beginning at around 40 minutes. It will be slightly longer or quicker depending on your oven. Cool and ENJOY!
