Hands-on Cooking Classes

I am very excited to be back teaching hands-on cooking classes again. Recently I have partnered up with North American Pizza and Culinary Academy. Here I am the Culinary Director, which means that I will also be teaching Hands-on Cooking Classes as well as working with clients for corporate and private class events.

 

The school also currently offer amazing pizza and bread classes.

I have been adding a whole bunch of Italian style hands-on cooking classes,

as well as kids hands-on cooking classes and camps to the schedule.

September 2nd- Late Summer Harvest Tomato Canning Class

Do you have way too many tomatoes from your garden and you don’t know what to do with all of them? Well, this is the class for you. In this class you will learn how to can tomatoes in 3 different ways and you will take home a jar of each! You will learn whole peeled tomatoes, (grandma’s style), you will learn crushed tomatoes with basil for sauce and you will learn a savory tomato jam. All three recipes will be made in class and you will also be sent home with the jars of each that you canned. You will also get all of the recipes to be able to go home and can all of the tomatoes from your summer harvest!

September 9th- Donuts Around the World Class

It is a truth universally acknowledged—fried dough is delicious. Square or round, filled or dipped, doughnuts entice taste buds across the globe. Join us and try your hand at making French beignets, Mexican churros and Italian bomboloni. Delicious in any language, any culture, any place.

-Nutella Bomboloni

-Classic Beignets with Powdered Sugar

-Traditional Churros with Mexican Chocolate Sauce

September 15th-Date Night-Cooking with Italian Wines

There’s so much more you can do with an open bottle of vino than drink it! In this class, we explore Italy’s wine’s many culinary uses. Practice incorporating different varietals into everything from poultry dishes to vinaigrettes. And we haven’t forgotten dessert—think pears poached in Montepulciano wine served with a wine-infused Zabaglione.

-Chicken Vesuvio with potatoes and peas-Featuring Italian Pinot Grigio

-Radicchio and endive salad with toasted hazelnuts and a prosecco vinaigrette- Featuring Italian Prosecco

-Montepulciano poached pears with Cinnamon Zabaglione-Featuring Italian Montepulciano red wine and Marsala wine

 

September 18th- Kid’s Kitchen Take Over-Gnocchi Class

What kid can resist playing with their food? With these fun gnocchi class, that is exactly what we get to do! These pillow-soft dumplings melt in your mouth and quickly vanish from the plate. In this technique-driven class, with lots of fun in the process! We will show your child the secrets for creating traditional potato gnocchi, along with a delicious variation made with ricotta (gnudi). They learn how to properly roll and cook these classic dumplings.
Plus, we’ll make two great sauces—pesto and brown butter—that pair perfectly with gnocchi.

September 29th- Homemade Ravioli Workshop
Making fresh ravioli at home is a lot easier and even more delicious than you might think. In this class Chef Steph will first show you how to make fresh pasta dough that you’ll use to make two delicious ravioli recipes. Then, we’ll share an assortment of easy fillings and sauces that complement your creations for an amazing meal. We off course cannot forget dessert; we will even make a sweet take on a ravioli.

-Pumpkin agnolotti with garlic, brown butter, sage sauce

-Four Cheese ravioli with swiss chard all’Amatriciana(tomato sauce with pancetta and crushed red pepper flake)

-Sweet, lightly fried ravioli with ricotta and chocolate chips

October 13th- Flavors of Italy Class

Indulge in the rich flavors Italy in the Fall! You’ll discover the art of creating mouthwatering gnocchi from fresh sweet potatoes. These pillowy delights will be paired with exquisite accompaniments like a perfectly seared steak and crisp salad. End your meal with a decadent whipped dessert, perfect for celebrating the vibrant flavors of fall and timeless Italian cooking.

-Pan seared Tuscan ribeye

-Homemade sweet potato gnocchi with garlic and herb brown butter sauce

-Shaved Brussel Sprout salad with pecorino and walnuts

-Butterscotch budino

 

October 14th- Date Night-Elegant Italian Dining
Join us for a taste of Italy’s most elegant flavors and discover ingredients that may be new to you, including wild mushrooms and leeks in a beautiful white wine creamy risotto, with pecorino, a hard cheese made with sheep’s milk. You’ll practice searing scallops, chopping herbs for gremolata and making a homemade Italian dessert of hazelnut panna cotta with chocolate sauce. Treat yourself to this elegant menu that highlights the finer things in Italian life.

-Pan seared scallops with clementine gremolata

-Creamy white wine risotto with wild mushrooms and leeks

-Hazelnut panna cotta with chocolate sauce

October 16th- Kid’s Kitchen Take Over-Halloween Treats

In this special hands-on class, kids will enjoy working alongside classmates and learning to create yummy Halloween cookies and treats. Chef Steph will walk your child through the steps of making cookie dough, rolling it out, cutting spooky shapes and decorating it with delicious icing. Also, we will also make some delicious Halloween candy bark! Treat your young chef to a fun and unforgettable cooking experience this spooky season!
