    Roasted Tri Color Potatoes

    Fingerling potatoes are one of my favorites for roasting. Since they are little, they can get crisp quickly. They also keep the fluffy, creamy inside of a great roasted potato.     Southwestern Corn Salad

    I absolutely love corn, especially in late Summer, early Fall as it is as fresh as can be.  Always looking for amazing side dishes to make when I make tacos.
