This past week we had our annual meeting for all of our Regional Chefs, Area directors and any other leader that is high up in our foods division. Unfortunately, we found out about a week ago that our fearless leader, (our VP for over 20 plus years), is going to be basically force retired. It is a shame that he will not go out on his own terms, but I am sure he is ready for the next chapter to begin.
Me and my team were asked to host a dinner to honor him and his years of service and send him off with a bang. I was asked to create a menu that would be upscale and really “WOW” him. During the menu planning process, I asked what his favorite dishes and desserts are. I was told that he loved an old dish called a “Peasant Lunch”. This is basically a meat and cheese board similar to a charcuterie and cheese board. He was also very fond of the old, classic table-side Caesar. Lastly, for dessert, his wife told us that he really enjoys Key Lime Pie, any type of fruit cobblers and/or pie and white chocolate bread pudding. I based my menu off of these items with a twist. This is how I prefer to cook anyway, so it was right up my alley.
Below are pics of the items that I made for the dinner, including the “show-stopping” egg yolk ravioli. Everyone was flipping out with these ravioli and I could not have been more excited with how they turned out. The yolk was perfectly cooked and when they cut into it… it broke amazingly enough, just as it was supposed.
These recipes are absolutely perfect for a nice dinner party and they are actually very simple to bring all together. Enjoy!
